Cynics predicted an early demise for Andre Rochat's venture when he opened a classic French restaurant in an ivy-covered 1930s-era home several blocks away from the bright lights of downtown's famous Glitter Gulch. That was in 1979, and Las Vegans and visiting conventioneers are still savoring his oven-roasted rack of lamb with mustard and herb sauce, filet mignon in green peppercorn sauce, and amazing soufflés. "So hot it will make your ice melt" is the friendly warning at this colorfully cluttered Mexican and southwestern warehouse restaurant. The Garduño Family imported this spot from Albuquerque in 1994 along with ongoing shipments of fresh green chiles from Hatch, New Mexico. The chiles are used in many of the spicier dishes (excellent cheese-stuffed chiles rellenos and red-chile enchiladas); those with more timid taste buds should sample the milder seafood tacos and fajitas that arrive on a sizzling iron skillet. The salsa bar has 24 sauces ranging in heat scale from super mild to super hot. The Italian Grill is the busy front room of this entry on the Venetian's convention-friendly "restaurant row." The place has a retro-hip '50s-coffee-shop decor and a casual, urban vibe. The Valentino rooms in the rear have a much quieter tone, with linen-swathed tables and opera music.
